Usually with the caliper in place with the old pads, you compress the pistons back in using a couple of screwdrivers prying on the pads. With the caliper off, pushing on just one pair of pistons you will have the other pair push out unless you open the bleeders. Or use a tool like this: https://www....

Yep. Dot 4 was the original stuff in the PPV and probably the same in the Camaro those calipers came from.
As for your perogies, they could be saved by scraping the burnt part off and putting them in a nice sauce

I got the Centric coated rotors. Very happy with them and fit perfectly.
