Just put a posi pumpkin in my '12 v6 car (not standard like the v8's)
Took it out for a tesrt, performance mode, traction control off but holding the brake pedal it won't rev past 3000.
Would leave two tire marks when I let off the brake pedal but wouldn't sit and chew like my v8 '12 or '13.
Is this a no torque v6 problem or something in the computer?

It could be a traction control problem. I know it was in the '11. You have to pull the ABS fuse to prevent it from kicking in. Try that.
